I <strike>coerced</strike> politely asked <a href="http://lenexicon.blogspot.com/" target="_blank">Megan</a> and her husband to help us move and now all that’s left is the aftermath of too many boxes and too much stuff needing to find a home. And one very dusty and bug-filled apartment that needs to be cleaned. (Anyone wanna help with that one?) <br />

When I moved into my old apartment it was just me moving in. That means one person’s stuff. I was moved and unpacked all in one little day. It was glorious. I felt settled in my new home for one. But this move was not as quick as we’re combining belongings and both of us have accumulated the appropriate amount of stuff for one living by themselves… and one of us has already been living there for 3 years. <br />
<br />
But really, my new home is wonderful. A see-through fireplace in mid-century style (my favorite). Original hard wood floors. A screened in porch, perfect for long summer night conversations. Original bathrooms and kitchen (ok, this one isn’t <i>as</i> charming). I can’t wait to share more photos once things are settled. That, and host fancy, adult dinner parties. <br />

I love making and receiving handmade gifts at Christmas. Last year my friend <a href="http://lenexicon.blogspot.com/" target="_blank">Megan</a> gave me some lovely homemade Lemon Sugar Scrub made with olive oil and introduced me to this awesome winter trick. Let's be real, skin gets dry in the winter and I hate putting lotion on, I'd rather jump into some warmer clothing. I find that this natural oil and sugar combo leaves my skin perfectly moisturized - no lotion needed. Hooray!<br />

This past Christmas I reused Megan's idea and made a coconut oil sugar scrub for some of my other girlfriends. I've kind of become obsessed with coconut oil lately. Admittedly, the coconut oil is less than ideal in the winter since it has such a low melting point (76°F). I've found that if I put a small jar in the bottom of the tub while I'm showering, the warm water will help it melt and it's ready to use after a couple of minutes.</div>

<span style="font-size: large;"><b>1. Live a healthy life.</b></span><br />
Last year, I focused on weight, as if health was only related to an arbitrary number on a scale. This year I'm focused on holistic healthy living. This means healthy eating, being active and working out, taking time to relax and enjoy life, and yes - still trying to kick the snooze button habit for more productive sleep.<br />
<br />
<span style="font-size: large;"><b>2. Live a creative life.</b></span><br />
This was a theme that was prevalent in last year's goals as well. I want to read more, sketch more, craft more, cook more and keep myself inspired personally so that can translate that creativity and inspiration into my professional life. <br />
<br />
I can't really measure these lofty ideals, so I'll just have to be honest with myself if I'm truly living more healthfully and creatively. That being said, I'm very excited to see what 2013 brings.<br />

I did accomplish my major goal of completing my thesis and graduating. <i>But</i> I seriously failed in most of the other categories and may even be worse off then I was at the beginning of the year. Here's a quick recap:<br />

1<i>. Lose 25 pounds. </i>Well... in the spring I was doing well, but then fall and winter came and thesis deadlines loomed and I started this fast food kick and my heavy winter coat showed up again. So, I'll definitely be keeping this one for 2013.<br />

2. <i>6 Blog posts per month.</i> Definite fail.<br />
<br />
3. <i>Read at least 1 book per month.</i> Actually, I think I may have come close to completing this with audio books and grad school books. I'm counting it as a win!<br />
<br />
4. <i>Break snooze button habit. </i>Another definite fail.<br />
<br />
5. <i>Weekly sketches.</i> Again, I think I sketched more than usual this year (sitting in a psychology seminar). I'm counting it as completed!<br />
<br />
6. <i>One craft/art project per month.</i> I think I could say I did this about half the time. So I'll give myself half credit.<br />

7. <b><i>Finish thesis & graduate!</i></b> Major success here. I should count it as double points!<br />

So I accomplished right at half my goals. Which isn't nearly as terrible as I had anticipated. I'm thinking through my goals for 2013 now. I've finally finished grad school! WOOHOO! While working on my thesis, I kept a list of things that I wanted to do when I was finally done with school and regained some free time. It's that time of year... when retailers and those that market to the retail industry start plugging their holiday (Christmas) items. Which means I've been living in a holiday world for the past couple of months. I find this utterly delightful, I get to live the spirit of the season twice each year. When I first started blogging ( over 4 years ago, gasp!) I posted a lot of style quizzes. Fresh pasta sauces is usually my go-to to help cull the herb... but the other day I came across the most wonderful of ideas. Chocolate Basil cake. That's right, combine it with the sugary, chocolatey goodness and it's sure to be a delight. But this time... I can't say I'm nearly as delighted. The cake turned out a bit... chewy, more like brownies and I'm not sure I'm completely sold on the additional basil flavor. Don't get me wrong, I'm glad I tried it out, I'm just not sure it will become a go-to recipe in my house. Those precious summer basil leaves may be better saved for a delicious pesto.<br />

I made a double-batch, which produced 30 cupcakes. I only used 1 cup of packed basil leaves, which I felt was sufficient.<b> </b><br />

<b>Basil Buttercream Frosting</b><br />
I was going to use this recipe, but when I saw that it required boiling
the basil leaves in milk and then throwing them out, I decided that
sounded completely unnecessary, highfalutin, and time-consuming. I went the lazy route and made up this recipe for a bit more basil-punch:<br />

1/2 c butter<br />
1/2 c margarine<br />
4 c powdered sugar<br />
2 Tbsp Almond milk<br />
1/8 c fresh basil leaves<br />
<br />
Cream butter and basil in a food processor until basil is thoroughly chopped. Add remaining ingredients slowly.<br />

Fun Fact: Basil, like any other unprocessed, plant-based foods have a high amounts of minerals and nutrients. Throwing away and cooking the basil leaves takes out much of those nutrients. Yesterday I possibly had my best yoga class <i>ever</i>. I was able to get into shoulder stand and head stand multiple times... well... I at least got my feet off the floor/knees off the elbows multiple times and hung out in mid-air momentarily in both poses. I've always been scared to let myself go farther than firmly planted on the ground and I am finally able to <b><i>trust my own strength</i></b>.<br />
<br />
Yoga has done wonders for me. Just a couple years ago I remember a co-worker boasting about the benefits yoga and how they had affected his life and I balked at the thought. At the time I thought I was way too Type-A to get any benefit from something like yoga. Boy, was I wrong.<br />
<br />
Yoga has given me <b><i>strength mentally, spiritually, and physically</i></b> way beyond my expectations. Every class I feel more focused, more mindful, happier and stronger. I cannot express enough how grateful I am for the practice. I'm in a really great place in my life right now and I trace much of that back to yoga. So, lesson of the year: Don't knock it 'til you try it.<br />

Anyway, Graham Hill briefly covers why he chose to be Weekday Vegetarian including the ethical and economic impacts. While my part-time vegetarianism is motivated by nutrition, the economic factors intrigue me. Many of the comments on the talk berate him for not being full-time veg. I’d say over 70% is definitely a step in the right direction and more power to him for promoting this systematic and obtainable approach!<br />
<br />
As far as my dive into the veg-pool... It definitely went by the way-side when I was on <a href="http://turtlesoupdaily.blogspot.com/2012/07/my-two-wheeled-companion-lexa-photo-by.html" target="_blank">RAGBRAI</a>. I decided my body needed the protein for muscle recovery and not enough plant-based protein options were readily available. Prior to RAGBRAI, I noticed I was more fatigued than usual. I think there are several factors that went into this, the extreme heat, cutting out too many good carbs, and a more-than-typical packed schedule. The past two weeks back on the wagon have been fabulous, I feel great and according to my most recent blood donation, my health stats are all in excellent shape. I'm excited to give a vegan restaurant a try tonight with a couple of girlfriends!<br />

<span style="font-family: Calibri,Verdana,Helvetica,Arial;"><span style="font-size: 11pt;">I am so excited. So very, very excited. This has been a crazy, busy summer and after the last couple weeks in June, I am in desperate need of vacation (this may have also been suggested a couple of weeks ago by my boss when I was a bit sassy...). So I am truly looking forward to a week away from the distraction of life and ready to be riding in <a href="http://ragbrai.com/" target="_blank">RAGBRAI</a>. Sometimes it honestly brings tears to my eyes just thinking about memories from <a href="http://turtlesoupdaily.blogspot.com/2011/08/beautiful-beautiful-iowa-hills.html" target="_blank">last year</a>.<br />
<br />
If you haven’t been following along, <a href="http://ragbrai.com/" target="_blank">RAGBRAI</a> stands for Registers Annual Great Bike Ride Across Iowa. It’s always the last week in July, during the most humid and hot time of year of Iowa. So sure, it’s going to be a scorcher and riding 40-80 miles per day in 110+ degree heat indices doesn’t sound overly pleasant, but it’s truly an awesome experience and I would recommend it to anyone, athlete or not... especially Iowans.<br />
<br />
RAGBRAI is a leisure, fun ride across the state. It’s not meant to be a race and it’s best that way. Sometimes I entertain the idea of riding hard in the morning in order to get to the next overnight town around noon to escape most of the high, mid-day sun. But I think that would be missing the point of RAGBRAI. It’s not about speed, it’s about enjoying each pass-through town and all of the activities that it has to offer on the journey. It’s about meeting fellow riders and making new friends along the way.<br />
<br />
Early morning riding is by far the best. Everything is peaceful, calm, and beautiful. The landscape is truly breathtaking and moves me to my core... sappy, right? But it's so true and I can't help but feel blessed for the experience in the sunrise hours. The majority of the riders (i.e. those that didn't get a little too tipsy the previous evening) start around 6:00 am, which means you hear hundreds of neighboring riders clicking into their petals, downshifting and in general riding as one. Picture one graceful, giant school of fish. As the day passes, riders start to disperse and there is no longer that continuous group movement of the morning, and honestly, it's probably safer that way. But there is something purely <i>magical</i> about RAGBRAI mornings.</span></span><br />

So this coming week, think of me as you’re enjoying your modern amenities. A co-worker has nearly convinced me to run a half marathon with him and his wife in October. It's really lovely to hear how much he believes in me and encourages me to set my goals higher than I typically do. Because I'm worth it (as he says). I still have my hesitations.<br />
<br />
When I was younger I used to really enjoying running. I was even at the top of my class for the mile. This was grade school... 20 years ago. And then I got boobs.<br />
<br />
Part of me is hugely intrigued about the thought of running a half marathon. In fact, at one point in time running a marathon was on my bucket list. But I think I removed it a year ago or so thinking that was a rather silly goal.<br />
<br />
In the past couple of years I've really come to enjoy yoga, cycling, and personal training. Never in a million years did I think I would enjoy yoga or personal training, so maybe running will be the same? <br />

Admittedly, I was a little nervous about the event. I'm shy in large groups and didn't know what to expect, but more importantly, shopping isn't really my thing. I tend to pride myself on my frugal nature and (somewhat) minimalism. Clothes shopping terrifies me, nothing ever seems to fit right and I'm not really a <i>fashionista</i>.<br />

BUT I was proven wrong. I had a great time pursuing the goods at Saks Off 5th with lots of lovely blogger ladies. In true Stephanie fashion, I was mostly found hanging around the home good items and the food table. Surprise, surprise, I know!<br />

I even scored this lovely turtle. OMG guys. I've wanted a Jonathan Adler turtle for years. I even blogged about one in <a href="http://www.bhg.com/blogs/better-homes-and-gardens-style-blog/2012/06/19/10-must-have-colorful-accessories/" target="_blank">my post</a> on BHG style spotters blog recently and <a href="http://turtlesoupdaily.blogspot.com/2010/11/squirrels.html" target="_blank">here</a> around Christmas. My friend, <a href="http://waywarddogs.com/" target="_blank">Crystal</a>, found his younger brother hiding away in a box that I had skimmed over and I quickly snatched it out of her hands claiming it as my own. Truly the treasure of the evening.<br />

As the store manager stated, they have everything from $5.00 to $5,000.00 price tags. I was very impressed with the price range and truly felt like there were a lot of things that fit my budget and my style. Many items in the store were discounted or on sale, which is also a huge bonus in my book!<br />

As I mentioned in a previous posts, I’m going through a major lifestyle
change regarding my eating habits. I’ve always considered myself a
decently healthy eater. I’ve always had an affinity for vegetables and
studying amateur nutrition facts. Alas, my obsession with nutrition is usually short-lived and only surface-level. But this time? This time it’s become an addiction.
After obsessively monitoring and journaling about my food intake for several months now, I've realized I’m not nearly as much as a healthy-eater as I once thought. My diet has been composed of too many carbohydrates, fats, and sweets and not nearly enough nutrient-dense vegetables, even though I continuously profess my love for most vegetables.<br />
This journaling obsession started as I was starting a Biggest Loser challenge at work and after I read the book <a href="http://www.amazon.com/gp/product/031612091X/ref=as_li_ss_tl?ie=UTF8&tag=fatfreevegank-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=031612091X" target="_blank">Eat to Live by Joel Fuhrman</a>.
Dr. Fuhrman's life-long diet plan for optimal health and to fight chronic disease is summarized as:<br />
<ul>
<li>1 lb of raw green vegetables per day</li>
<li>1 lb of cooked green vegetables per day</li>
<li>4 fruits per day</li>
<li>1 cup of beans per day</li>
<li>Up to 1 handful of nuts per day</li>
<li>No oils or salts added, you get enough from nuts and other vegetables.</li>

I don’t know about you, but that <strike>seems</strike> seemed a bit extreme to me. More power to you, if you can pull it off. For those that couldn't completely commit, he recommends following it at least 90% of the time. At the time I thought <i>"That's still extreme, buddy, and I don't want to miss out on some of life's biggest joys because I'm this strict in my eating."</i><br />
I briefly thought I should give it a try, just to see how my body feels on such a plan. That thought led to an extreme cycle of food consumption monitoring. I went through week-long phases where I tried different methods/diets I was reading/watching about, they were:<br />
<ul>
<li>Eat to Live lifestyle diet (I wasn't properly prepared at the time and didn't give it a fair try)</li>
<li>High protein to build muscle mass + lots of vegetables</li>
<li>No Processed Foods</li>
<li>Paleo Diet</li>
</ul>
Then my birthday came (and went) and I had re-entered a two-week period of eating crap. I knew I needed to get back on track. After more documentary-watching, I started to think that vegetarianism may be the way to go for ultimate long-term health. There are counter arguments to a complete vegetarian diet, because you can only get some vitamins from animal-based foods. Below is what I'm hoping to make my lifestyle diet plan:<br />

Again, as I stated, I'm doing this for ultimate long-term health. From the books I've read, the documentaries I've watched, and the doctor-written blogs I follow, I've determined this is the best plan for me. So far anyway.<br />

If you would've asked me 10 years ago if I would ever become a (85%) vegetarian, I would've answered with an emphatic <i>no</i>. Even 10 weeks ago I would've had the same reaction. If you look at health studies, cultures that eat more meat end up with more chronic diseases. Americans by far eat too much meat. Yet the National Dietetic Counsel believes that meat, in moderation, is not bad for you. I agree. I just want to be cognizant of the amount I'm consuming. Similar results are found for dairy products. Plant based foods are the way to go for me.<br />
<br />
I've found the hardest part about this transition is the time it takes to prepare meals. The meals that I make are simple and delicious and I feel great after eating them, but it does take some extra preparation time. I mean, do you know many vegetables you have to eat meet your daily caloric intake? Answer: a lot.<br />
<br />

1: Early this morning I went on a beautiful 30-mile bike ride in the hilly Kansas countryside. It was lovely I tell ya, a great way to unwind from the work week. Bonus: My legs are getting stronger and the hills were rather enjoyable instead of the nearly impossible, like I remembered from last summer.<br />
<br />
2: I met some adorable baby calf friends along the way! Although they were scared off as soon as I turned on my excited-baby-calf voice and started snapping photos. Sigh, I just know we could've been fast friends...<br />

3: Yummy homemade <a href="http://allrecipes.com/recipe/butternut-squash-bread/detail.aspx?event8=1&prop24=SR_Title&e11=butternut%20squash%20bread&e8=Quick%20Search&event10=1&e7=Home%20Page" target="_blank">Butternut squash rolls</a>. By far the best yeast bread I've ever made. These make the perfect, hearty buns for a portobello mushroom burger, lettuce and thick tomato slice.<br />
<br />
4: A delicious beet and arugula salad from <a href="http://unforked.com/" target="_blank">Unforked</a> with edible flowers. Seriously. Edible flowers! From a restaurant that also boasts a drive-thru!<br />
<br />
5 &; 6: Lovely, lovely tile and lighting from a restaurant in Chicago (can't remember the name of it) that I visited while in the city for a bachelorette party. I ordered the braised rabbit with gnocci, but failed to get a good pic, rest assured my tummy was very fond of the meal though.<br />
