Cupcake Craze


I am so excited for the 4th of July! In my new cupcake craze (or "Dayle Fever") all I can think about for the 4th of July is Red Velvet cupcakes with white butter cream frosting and blue fondant stars! I found some inspiration images and now am torn between a blueberry and strawberry dessert or cupcakes. Maybe I'll do them both!
I bought and practiced making fondant shapes tonight. It is super easy... I say that now, but we'll see once I actually put them to use.

Chocolate Cupcakes Anyone?

So, I was bored today and decided to make cupcakes. (Well actually I intended on making brownies, but I opened the box... yes I use boxed mixes and it was for chocolate cake vs. brownies... oops!) Anyway, I made cupcakes AND made homemade chocolate frosting AND got out my Wilton Dessert Decorator Pro to make them look fancy. They weren't perfect, but it was my first attempt, so give me a break! Here's the yummy chocolate frosting recipe:

Rich Chocolate Frosting
1 cup butter (not margarine), softened
4 1/2 cups confectioners' sugar
1 cup baking cocoa
2 teaspoons vanilla extract
1/3 cup milk

In a larger mixing bowl, cream butter. Gradually beat in confectioners' sugar, cocoa and vanilla. Add 1/3 cup milk, continue to add milk 1 tablespoon at a time until frosting reaches desired consistency.

I did it!

After driving around the Metro North Parking lot 3 times and calling the recycling center twice to listen to: "the Metro North Recycling Center is located at the far northwest corner of the mall," I finally decided to give up and drop off our clothes at the kiosks and go home. As luck would have it, while I was trying to fit all the clothes in the kiosk, someone drove past me and kept going toward the far northwest corner of the parking lot. Ah ha! I decided to follow, but grabbed my pepper spray in case it turned out to be some sort of shady drug deal.... it wasn't. It was the recycling center! Far bigger than the tiny recycling center that I am used to, I was a little overwhelmed but finally was able to find the proper receptacle for everything.

Yay! Now I know how to recycle in North KC!

Oh, so green!

I feel so green right now. My roommate and I have always felt bad that we didn't recycle, but honestly living in an apartment in Kansas City we didn't really know how. Finally after one year in our apartment and deciding to renew our lease for another 12 months, I decided it was time and I think I found the correct drop off location for North KC.
I priced different trash and recycling bins at The Container Store, Ikea, and Target. Of course I got the best bang for my buck at Target, so I purchased three trash bins; one for plastic, one for tin, and one for glass. I downloaded the Martha Stewart recycling icons for each of the bins to make them a bit cuter and more cheerful. The plastic bin filled up the quickest and started spilling over. I decided it was high time that we further the process and actually turn in all of our recyclable waste. I even cleaned out our plastic shopping bag stockpile to recycle. It disgusted me... this isn't the first time that I have disposed of our excess baggage during the year, even more reason to use my reusable shopping bag!
So tonight is the night! My car is all packed and ready to go so I can't make excuses. I also have two big boxes full of clothes we are donating to Goodwill loaded and ready to go.

Additionally, yesterday was the Crown Center bi-monthly farmer's market. I bought strawberries, oranges, green apples, red potatoes, red onions, and delicious, salmonella-free tomatoes! Everything is delicious, I even made a HUGE meal last night to use as much produce as possible: BLT with flavorful tomatoes, creamed new potatoes and peas, and a spinach salad with a homemade strawberry vinaigrette. I feel so green for shopping locally and I get the benefit of enhanced flavor!

Reduce. Reuse. Recycle. I covered them all... now if I could only get the shorter shower thing down...

Weddings, Tornados, & Lightning! Oh my!

Saturday was quite a day. We planned on attending Josh & Rachel Haugo's wedding in Lake Mills, IA, so I drove up to DSM Friday night to see Jon. He had just moved into a new place and misplaced the wedding invitation, and being the over-prepared person I am, I had previously looked up the information online. So we printed off the wedding detail information from theknot.com.
On Saturday we got a good early start and picked up one of Jon's friends in Ames on the way to Lake Mills. According to the internet, the wedding was at 4:00 p.m. We made the 2.25 hour journey and we were set to arrive about 45 minutes early. About 2 miles before our exit on the south-bound side of interstate it appeared that the state patrol was doing some sort of a road block. So that got us all excited and talking about fugitives on the loose or Josh disappearing before the wedding...
When we pulled up to the church, it was crazy, because we were a good 45 minutes early and there were tons of cars there. Jon was in the midst of putting on his dress shirt and it started to rain pretty hard. We waited a couple minutes and all of a sudden a sheriff sped up, ran into the church, ran out and sped away. That, coupled with the road block, made us really start to wonder what was going on. When there was finally a break in the rain, we decided to run into the church. We found the entryway was full of people waiting and watching the weather. We asked what was going on and found out the sheriff had warned the wedding guests about tornados in the area. All the boys were watching the wall clouds that were a couple miles away! I thought it was so crazy that all of these people were there so early. One of my friends, Katelyn shortly spotted me and after chatting briefly said something like, "Did you just get here?"
It wasn't until a couple seconds later that I asked, "Wait... when is the wedding?"
It had started at 3:00, not 4:00 like it had said on the internet and was over by the time we got there! So we missed the wedding! I think we were all really disappointed.
We stayed outside for a bit and watched the wall cloud, we saw two funnel clouds drop, crazy amounts of wind, and when the cloud rotation was directly overhead, I decided it was time to head toward the church basement. Although, I couldn't persuade Jon to join me and he kept persisting that I "Go find Katelyn"... meaning let him watch the fun boy stuff and stop whining.
It didn't look like the rain would let up anytime soon, so we ran through the rain and headed toward the reception at Diamond Jo's Casino Event Center. All the decorations and flowers were beautiful at the reception. Her colors were black and green and she used all of my current favorite flowers. The bridesmaid's bouquets were white calla lily's and white/green roses. At each table there were 3 green spider mums (my absolute fav right now). And she had a cute candy table with white and green candy in large hurricane vases. I wish I would have had my camera, because everything was simple, elegant and perfect.
Jon and I had planned on driving back to Ankeny that night yet, so around 10:00 pm we left the reception and headed home. We saw the most brilliant lightning show I have ever seen. Most of the lightning was in the clouds, but it was very veiny-looking and seemed to be hundreds of miles long. We had a constant strobe on the way home because of the lightning. It was definitely better than fireworks, the only scary part is we were driving through some pretty strong wind and rain. Which I then drove through more strong wind and rain again Sunday afternoon on the way to KC... crazy weather these days!

New Pillows!


I crafted a lot this weekend (I felt so productive)! One of the things that I was inspired to do was make more pillow, using circles cut from wool felt to create different patterns and textures (shown above). I love the texture these circles make and I have ideas for more textures and patterns. I absolutely love the color... but, they don't compliment the other shades of orange that I have in my room like I would like. I think I might try cream or grey next!
